These are my favorite chocolate bars:
When I was recently in Europe, I found a chocolate bar that I loved. It's a Lindt bar, and I am annoyed to find that while they sell many things to the American market, this bar is not one of them. It's a dark chocolate bar filled with with dark chocolate mousse and sour cherry-chili preserves. It's totally the best thing ever. I need to find someone who will ship me these from Germany.
I also love Chuao's chinita nibs bar - dark chocolate with caramelized cacao nibs and nutmeg. I like the texture of the nibs a lot, and in general find that I like chocolate bars with cacao nibs in them.
Lastly, Green & Black's Maya bar is orange and spices in dark chocolate, yet another favorite.
In general, I prefer dark chocolate of at least 70% cocoa solids. I like plain dark chocolate as well as those with additions, but I don't have any favorites there so long as it's above a certain quality (ie, no Hershey's or similar crap). I find I don't like Ghiradelli all that much either, the texture isn't quite smooth enough.
I eat chocolate regularly, though not much at a time. I tend to eat about one cubic inch of chocolate a day, going through bars slowly eating one square at a time, one small bite at a time. I like to savor it.
